If by underrepresented, you mean the color I hoard the least, it would be yellow! Those linens look interesting.
I've only recently come to appreciate how much of a lift in my quilts the colour yellow can give, in all its forms - lemon, deep gold, buttercream etc - yet I have very little.

Yellow - It is hard to find bright yellows :)
I don't have much yellow, although it is a color that can make a quilt "pop"! My favorite colors are red and purple, and I have quite a bit of those two colors!
I have hardly any reds - and what I do have are all the same!

Golds-browns-beiges. Even though the colors are such basics and good blenders, and favorites. Maybe that's why there are so few of them in my stash. I use them up right away.
I have hardly any pastels - most of my prints are bold.

I would have to say that blacks and whites are underrepresented..I never seem to have any!
I have one little piece of yellow. That would be the color that I do not have much of.

I'm really lacking in the blue department. Started looking for baby boy fabrics in my stash and there really was very little blue to be found!

Purple -- I like purple but have a hard time finding fabric in shades of purple I like.
I don't have much orange, yellow and grey. Not really my favorite colors, but they are needed in quilts and projects.
Browns...they are my favorite so they go quickly!

I would say that orange is very unrepresented in my stash as well. I decided to do an orange and green quilt and virtually had no orange.
my stash is still tiny, but I realize I don't have many neutrals.

Even though shades of green are my favorite, there aren't many in my stash.
I think the color that is most under-represented in my stash is yellow. I'm working on collecting scraps to make a color wheel quilt and I need more yellow.

Ha! I have next to no blue in my stash (I have aqua and turquoise but no primary blues ) I have synaesthesia and primary blues scream at me! I'd love some of yours though >:)
I started a quilt this weekend and realized that I had absolutely no grey in my stash! We doesn't have grey? Me, that's who!
Honestly, I couldn't tell you specifically one color I know is short in my stash, but if I had to guess, I'd probably say pink. I'm not a huge fan, so I know I don't have much of it.
I was recently putting some fqs in a rainbow bundle and I realized how few yellows prints I have. Also, orange, but I think they are both strong colors and a little can go a long way!

I only have a teeny tiny stash so I don't have much of any color, but I realized when trying to get organized last week that I have no orange or yellow. Not a single piece of either color. I guess I've never used either color in a project.
I think yellow is the most under-represented in my stash, though I love to use it with cool colors.

I'm working on getting more light neutrals and solids into my stash. I have a bad habbit of picking up fat quarters and remnants on sale - and they all need something to set them off!
Well, I used up most of my oranges, but I'm almost always consistently short on yellow and green--even though I like both colors!
I'm lacking yellow. But yellow is really hard to pair with since the shades really differ. I love all th solids!

Brown - I'm not a brown gal! I use it sparingly when needed and if I can obtain the same look with another color I go with the other color. Happy quilting!
Oddly enough, it's "warm" colors that are very underrepresented in my stash. I have tons of blues, greens, purples, and grays, but very little of reds, oranges, and yellows!

The color that I am forever searching for and seems the most under-represented in the fabric world is GREY! I also have a hard time finding good basic reds.
I'd have to say that orange and yellow are the colors I have the least of. The orange is no surprise to me since it's my least favorite color, but I was surprised I had such little yellow when I sorted my fabrics a while ago.
I find purple just isn't "in" right now. It's terribly hard to find! I'm trying to acquire some more. :)

As a new quilter, I am just beginning to develop a stash! Red is probably the color I lack the most- and I don't have many solids at all, as usually I order coordinating solids when I get ready to start a project!

Having had a good look through my stash, it would appear I am deficient in the cooler side of the colour spectrum. I seem to have "sets" of every other colour but blues, greens and purples. This is funny to me because when it comes to my knitting, I tend to lean toward cooler colours.

I'm just starting my stash, so it is easier to say what I have the most, which is green and pink (my favorites!). So most everything else isn't represented. Of my other favorite colors, I guess blue and turquoise is what I need to work on next.

I swear I’m not parroting you, orange really is quite absent from my stash, even though I love it.
My current stash is very heavily green and blue, with a little purple, yellow and red thrown in. But, it’s a small stash, so I’ll fix that eventually.

Taupe...Actually, all shades of it. It is really not easy to find taupey fabrics.

Looking at my stash right now I see NO orange...such a shame.
I am in the process of cutting a lot of my stash into 5 x 5 squares and the red pile is pitifully small!

I sorted my stash not so long ago for the 3x6 bee and discovered I had next to no yellow fabric (only 3 prints!). I've been trying to add more, but I've not been very successful, LOL!

I'm low on both orange and yellow - two colors I don't seem to use very much and therefore don't buy very often. Although I think there are some gorgeous shades of both.

As the mother of two boys, aged 9 and 11, I cannot believe I'm going to admit this....my stash is light on the color blue. In fact, the amount of blue and pink are just about even.
